   Hi friends, today different recipe "Dry fruits Gutti Vankaya fry". Some different and tasty fry. There are so many variations of stuffed brinjal curry. My favorite way to spend my afternoons – sipping on a cup of hot tea and reading the umpteen cookery magazines that I subscribe to. Going through them, one thought came to my mind: Brinjal, also known as aubergine or eggplant, finds use not only in Indian cooking but in several Middle Eastern and European dishes as well. It can be baked, steamed or roasted. This veggie is a chef’s delight, can be made into a dip, a snack, an accompaniment with rice or the main dish on the table. All that it takes is a bit of imagination and lots of love while cooking. There are several versions of gutti vanakaya aka bharwa baingan. This version is of pure unadulterated Andhra style. This is mainly made as curry dish weddings and gatherings. This involves lot of oil. I did my best to use as less as I can. It did come out nice. In my blog have three  types of gutti vanakaya recipes. This 4th recipe in my blog.. I use some different in this recipe.. Its totally different and some sweet and spicy.. My Amma prepare with vankaya (brinjal) like vankaya fry, vankaya curry, gutti vankaya etc..., In my family we eat it so much... But I see the recipe in t.v. I like it, so I tried this recipe in my home wow its amazing taste... Dry fruits sweet, spicy of garam masala wow it really so good to... Its combination is pappu, rasam, pappu pulusu... Its so good eat it this recipes... So friends lets see the process to make the 'Dry fruit Gutti Vanakaya' recipe.....  

Ingredients :-

  • Brinjals  250 grams
  • Onions 2
  • Tomatoes 2 
  • Ginger garlic paste 1 tbsp
  • Almonds 10
  • Cashew nuts 10
  • Raisins 8
  • Garam masala powder 1 tbsp
  • Fresh coconut pieces 1/2 cup
  • Coriander seeds 1 tbsp
  • Salt to taste
  • Red chili powder 2 tbsp
  • Turmeric powder 1/4 tsp
  • Oil 15 tsp
Dry Fruits Gutti Vankaya Fry Recipe How to prepare
Preparation :-

  1. First take a pan add coriander seeds dry roast it for 3 minutes in low flame. Then move it a side.
  2. Now take a jar add onion pieces, tomato pieces, red chili powder, turmeric powder, salt, ginger garlic paste, coriander leafs, almonds, cashew nuts, coconut, garam masala powder, raisins, fried coriander seeds and grind it fine powder.
  3. Once it grind then add some water again grind it thick paste. Then move it to a bowl.
  4. Take brinjals cut it into for stuffing, then open it and then the mixture will be put it in side and then close it. 
  5. Then take a pan add oil to heat, when oil is heated then add stuffed brinjals and then cook it for 5 minutes in medium flame.
  6. Put the lid also the brijal will be cooked early... After 5 minutes open the lid and mix it for. When the brinjal is boiled then add grind masala mixture also and then cook it for 5 to 10 minutes in low flame.
  7. When the masala will be catch the brinjal  totally it came good smell, then the fry is ready. Once check it is ready are not, when the fry totally fried then move it to a bowl and then serve it......
And now tasty and sweet & spicy dish Gutti Vanakaya fry ready to eat... This recipe is for side dish... So we can eat this papau rice, rasam, you can serve with chapati also so tasty.... So friends try this tasty recipe in your home and enjoy the new taste.... :)

Here we have given list of ingredients and procedure on how to make Jaggery Dosa recipe, so that any one can make this Jaggery Dosa very easily without any experiance on making this recipe. I added some rice flour to make the dosa little crispier..You could do this without adding any rice flour too..I hope you will love it for sure ... This mildly-sweet, pancake-like dosa is made of rice flour flavoured with coconut, cardamom and jaggery. Jaggery dosa should ideally be served fresh and hot, with a savoury snack. This is a simple and healthy recipe for breakfast. I just opt for this when I haven’t planned much for the morning breakfast. There are both hot and sweet versions of the dosa prepared using wheat flour. Actually this break fast will prepare my Amma. In my school day's she prepare this tasty and sweet dosa to me & my sister. Its preparation is so easy, taste also so crispy and soft. No time to take for preparation to this recipe. This recipe is so old, my amma, amma prepared this recipe, she add some desi ghee to fry the sweet dosa. My grand mother will prepare so many varieties... Of course I like & love to cook variety's. My amma will help to the combination for prepare old recipes.  So lets watch the ingredients... 

Ingredients :-

  • Wheat flour 1 cup
  • Rice flour 1/4 cup
  • Grated coconut 1/4 cup
  • Jaggrey 1/2
  • Sugar 5 tbsp
  • Cardamom powder 1tbsp
  • Ghee to fry the dosa
  • Milk 1 cup
  • salt pinch 
Wheat Flour With Jaggery Sweet Dosa Recipe

Preparation :-

  1. First take a bowl add wheat flour, rice flour, salt, grated coconut, cardamom powder, grated jaggrey (sweet as u like to use) sugar and mix it well for.
  2. Then add milk mix it like a dosa batter. If u want water add some little bit and again mix it well for.
  3. Now take a dosa pan heat it, when the pan is heated then take ladle full of batter on to the pan and spread in a circular motion starting from the inside.
  4. Working your way towards the out side. Then add little bit ghee around the edges of the dosa.
  5. When dosa is cooked till golden brown color, then filp and cook the other side also fry it for golden brown color.
  6. Then move it to a severing plate, and then serve it with tomato pickle.. Its so tangy and sweet taste will came...

Bagara Bhindi Dahi Masala With Yogurt gravy Recipe

   Bagara Bhindi Dahi Masala is a popular recipe in hyderabadi cuisine esp. For summers where dahi cools off your body. Select small and young bhindi to make the dish more taste and to cook it in lesser time. Dahi bhindi is a low calorie food. You can also cook masala bhindi to try bhindi in different flavor. In Andhra we prepare with bhindi like fry, curry, Pulusu. We love to it it so much. Its very famous veg in Andhra. So I tried today with yogurt, I skipped the cashews this time to make it a little lighter. That the cashews are what helps keep the yogurt creamy, so the yogurt separated, but it was still good!  Low Fat Vegetarian Cookbook, simple to make, tasty, low in calories and goes well both with steamed white rice and chapatis. I don't remember when I fell in love with okra but I am glad I did. Okra/Bhindi/Lady Finger is one of the few vegetable which is loved by everyone, I have not seen a single person who doesn't like okra. Personally I love okra stir fried with onions, serve them hot with rotis drizzled with ghee and its perfect and satifying meal. Just thinking of it makes me drool!!. Over the years I have prepared this many times and always makes me want more! The taste is very much similar to Kadhi which I have posted earlier with addition of crispy okra pieces.   • Onions 2
  • Tomatoes 2
  • Turmeric powder 1/2 tsp
  • Yogurt 1 cup
  • Red chili powder 2 tsp

  • Oil for deep fry 
  • Oil  6 tbsp

Bagara Bhindi Dahi Masala recipe How to prepare
Preparation :-
  1. First take pan add oil to heat, then take bhindi cut it in medium pieces. When the oil is heated then drop bhindi pieces and then deep fry it for golden color.
  2. When it came golden color then move it to a plate. 
  3. Now take a wok add oil 6 tbsp to heat it, when oil is heated then add mustard seeds to fry, then add finely chopped onions, curry leafs and then fry it for lite pinkish color.
  4. Onion is fried then add salt, turmeric powder and then mix it well for, fry it for 3 minutes. 
  5. Then add tomato puree mix it well, boil it for 2 minutes in medium flame. Now add red chili powder, garam masala powder mix it well for oil will oozes out.
  6. Oil will oozes out then add fried bhindi mix it lite. And boil it for 2 minutes then add yogurt and then mix it well.
  7. And cook it for low flame for 5 minutes, then move it to a bowl and then serve it hot.... 
Now the tasty and spicy gravy is ready to eat.. Its very tasty and little sweet and spicy gravy you can serve it with roti or rice its so good to eat... You can try this recipe in dinner time..... South Indian Rava Idli Recipe How to Prepare

   Hi, friends, good morning to all... Today break fast item "Rava Idli". Its south special break fast recipe. In south side we prepare morning break fasts Idli, dosa, vada, pongal, etc.., This breakfast is very good to health, months kids are to eat this idlis. In this it so good to eat the tasty item. We eat this idlis with sambar, karapodi(red chili masala powder) with ghee its so tasty and so delicious.. In Andhra have so many restaurants, hotels, small road side shops have here. There also prepare idli, dosa, its very famous in south side break fast item. Idlis are often referred to as steamed rice cakes – They are usually a healthy, yet filling way to start the day in South India. Idli is a steamed south Indian dish that is typically made from fermented rice batter. Rice batter needs to be prepared in advance however, so this recipe uses rava (semolina) to make the idlis instead. Perfect for a quick and healthy breakfast, this simple recipe will soon become one of your favourites. 
   But today we prepare some different and tasty idli makes... Normal idli we prepare couple of days, but today some different and taste & little bit spice. Same process to the idli batter. Then I use some coriander leafs, cashew nuts, ginger, etc..,  I love idli & dosa... Although these mixes are convenient when the going gets busy, I will recommend you find a relaxed 15 minutes somewhere to give this a shot. Since it takes just 15 to 20 minutes in all, you have enough time in the morning  break fast to make this a part of your lunch box also.... As you like but I prefer this morning breakfast... It so tasty and delicious... You can use to serve with coconut chutney it so tasty to this Idli. So friends lets see the process to make the idlis.......

  • Idli batter 3 cups
  • Ginger pieces 2 tbsp
  • Green chilies 5
  • Urad dal 1 tbsp
  • Mustard seeds 1 tsp
  • Cashew nuts as u like
  • Turmeric powder 1/2 tsp
  • Coriander leafs
  • Oil 5 tbsp
  • Salt to taste
  • Curry leafs
South Indian Rava Idli Recipe How to make
Making Process :-

  1. First take a bowl add idli batter mix it well for. (I post idli prepare process in my blog.) Then add salt and then mix it well for.
  2. Now take a pan add oil to heat it, when oil is heated then add urad dal, mustard seeds, cashew nuts, curry leafs fry it for lite red color.
  3. Then add finely chopped ginger pieces, finely chopped green chilies,  turmeric powder and now mix it well. Fry it for 2 minutes in medium flame.
  4. After 2 minutes and then move it to idli batter and then mix it well. Then add finely chopped coriander leafs and then again mix it.
  5. Now take a idli cooker add water, take idly stand make idlis and then put it into cooker now close it wit lid. Boil it for 10 to 15 minutes in medium flame.
  6. After 10 minutes, check it once the idli is boiled then move it a side and cool it for 5 minutes.
  7. When the idli is ready, then move it to a serving plate and then serve it hot.. Add some coconut chutney...

Andhra Snack Recipe Vankaya Bajji Stuffed How to Prepare

     Hi friends good evening to all.... Today one different and spicy snack item Vankaya Bajji (Brinjal Bajji). Its a street food recipe.. In Andhra we eat evening tea time snacks like green chili bajji, vada, bondalu etc.., Its very famous in Andhra.. Actually this recipe is street food, we like it so much so spicy snack. In my school day's  we eat regularly, my grand mother(Ammama) will prepare this snack, of course my amma also prepared variety snacks she also prepared. When we came to home, we fresh up then eat it.. It so hot and spicy... Now come to the recipe. (Brinjal bajji recipe) vankaya bajji recipe is very delicious and tasty snack. There can be many other brinjal recipes like roasted eggplant pickle, vankaya bajji, vankaya bajji pachadi and vankaya bajji kura. Like so many variate's we prepare this brinjal. Any Bajji is easiest and quickest snack prepared with a handful of ingredients with different vegetables like Raw banana, potato, onion, brinjal, green chilly and capsicum. It is also a road side snack available in almost all towns/cities in India. Almost in Andhra available each street.. I love bajji's, they are hot, crispy, spicy and yum. 
    But we love to green chili bajji only, so we prefer green chili bajji. When we were little amma used to make bajji atleast once a week.  One day my amma prepared this brinjal bajji prepared for use. But we love to eat brinjal curry, masala gravy ect..., But my amma like to eat brinjal bajji, also loved my dad also so she will prepare it. My sis also eat but I will not like to eat that so my amma prepare to me green chili bajji.  She loves it so much. I wont even touch that when i was little. But one day i tasted that bajji and really fell in love with it. A couple of bajjis and a steaming cup of tea, what else can anyone asks for. The stuffing inside the bajjis makes it even more tastier.  If you love brinjal, you will surely love that one. The outside of that will be crispy but the interior stays soft and fluffy. Ingredients :-

  • Small size brinjals 6
  • Besan 1/2 cup
  • Rice flour 4 tbsp
  • Onions 2
  • Coriander seeds 2 tbsp
  • Dry Red chilies 6
  • Cumin seeds 1 tbsp
  • Garlic cloves 5
  • Salt to taste 
  • Oil for deep fry
  • Curry leafs
 Andhra Snack Recipe Vankaya Bajji Stuffed How to Prepare Indian style
Process :-

  1. First take a pan add dry red chilies fry it for 3 minutes. Then add coriander seeds, cumin seeds,  fry it for 2 more minutes. 
  2. Now add curry leafs, garlic cloves and then switch off the gas and then cool it.  When the mixture is cool then grind it fine powder and move it to a bowl.
  3. Next take a jar add onion pieces and then grind it rough paste. Now start the preparation.
  4. Take a wok add oil 4 tbsp heat it, when oil heated then add grind onion paste, salt and fry it for 5 minutes. 
  5. It came thick paste then add grind powder, then mix it well for 1 minute cook it for the mixture. After 1 minute check it salt and then move it to a side and cool it for.
  6. Now take brinjal and then cut it 4 sides for stuffed the mixture. Then take a wok add oil for deep fry. When oil is heated then add brinjals and fry it for 5 minutes, move it to a plate. (Why means the brijal will be cooked in side also and soft to eat that brinjal.)  And cool it for.
  7. When the brinjal is cool, then stuff the onion mixture into it. 
  8. Now take a bowl add besan flour, salt, rice flour and then mix it well. And add water again mix it thick batter (like bajji batter). 
  9. Now heat the oil, when oil is heated then take stuffed brinjal dip into besan flour and then drop into oil fry it. Fry it in medium flame, it came golden brown color came and then move it to a paper towel. 
And now the tasty and crispy snack recipe "Vankaya Bajji" is ready to serve.. You can serve this snack with green chutney its so spicy and delicious street snack recipe... So friends try this recipe and then enjoy the taste..... :) 


Tomato With Paneer Gravy How to Prepare

Paneer tomato tastes as heavenly as it looks. It captures some of the delectable flavor of summer season and puts the summer tomatoes to good use. But today I use only tomato and panner only. I ts so delicious gravy, tangy and soure... I love paneer.. Addition of cinnamon powder towards the end of cooking enhances the flavor of this curry....   • Shahjerrs 1 tbsp
  • Red chili powder 2 tbsp
  • Turmeric powder 1/4 tsp
