- Brinjal 250 grams
- Onions 2
- Tomatoes 2
- Fresh Coconut 1/4 cup
- Ginger garlic paste 1 tbsp
- Turmeric powder 1/2 tsp
- Red chili powder 2 tbsp
- Mustard seeds 1 tsp
- Oil 8 tbsp
- Salt to taste
- Cinnamon stick
- Cloves 4
- Cardamom 2
- Garam masala powder 1 tsp
- Curry leaves
- Coriander powder 1 tsp
Preparation :-
- First take a jar add coconut pieces, ginger garlic, salt, turmeric powder, red chili powder and grind it fine paste... Then take brinjal cut it like in video and then stuff it like I show in video........
- Now take a wok add oil to heat, then add cinnamon stick pieces 2, cloves, cardamom to fry.. Then add mustard seeds to fry.
- Then add chopped onions to fry, then add turmeric powder again mix it, when onions are soft then add chopped tomatoes mix it well..
- And then add stuffed brinjal mix it well and then close with lid and boil it for sim flame for 5 minutes...
- After 5 minutes open the lid mix it again, and then close with lid again fry it for 5 minutes for brinjal is boiled...
- When brinjal is fried and soft then add remain coconut masala in curry again fry it for good smell..
- When masala came good smell, oil will oozes out then the curry is perfect... And now add 1, 1/2 glass water and then mix it well and boil it for curry will be thick.. (Watch video friends) Oil oozes out like in video then switch off the gas and then leave it for 5 minutes and then move it to a serving bowl and serve it.......
