While at the farmer’s market on Saturday, I picked up a small bag of native white potatoes and today I’d like to showcase them in perhaps the most beloved of all summer picnic fare: Classic Potato Salad. I’ve tried many versions of potato salad over the years and doubtless you have too. Some sweet, some savory, but without exception most slathered in mayonnaise. I will NOT speak ill of my most favorite condiment. But truthfully, mayo is out on a strict low-sodium diet. Thankfully this recipe, adapted from the No-Salt, Lowest-Sodium International Cookbook, makes use of another dreamy favorite, sour cream. Although I've often made curried chicken salad, for some reason, I had never made curried potato salad before yesterday. I have no idea why I waited so long, since it's totally delicious! used the other pound of Desiree potatoes we received in our produce box to make this yummy side salad.
Ingredients :-
- Boiled Potatoes 100 grams
- Onion 1
- Curd 1 cup
- Salt to taste
- Pepper Powder 1 tbsp
- Green Chilies 6
- Garlic Cloves 6
- Coriander leaves
Preparation :-
- First take a plate, finely chopped boiled potatoes, salt, garlic cloves pieces, pepper powder, finely chopped onions, finely chopped green chilies, chopped coriander leaves and mix it well.
- Now add curd and mix it well for... Then move it to a serving bowl and then serve it....
