Dahi Vada How to Prepare Recipe Andhra Style

Dahi Vada, Dahi Bhalla, Thayir Vada, Thayir Vadai, whatever you call them, this is THE perfect dish to have during a hot summer day. Dahi Vada are fried dumplings that are dunked in water to soften them, soaked in spiced yoghurt, and topped with various chutneys (which are optional). Although this is fried, because the dumplings are dunked in water, majority of the oil oozes out of them, making them super soft and light. One bite into a dahi vada and you will experience an explosion of a diversity of flavors in your mouth. Its undescribable! Down to South, we make Perugu Garelu (Andhra) and Thayir Vada (Tamil Nadu) where the vadas are soaked in beaten curd and tempered with mustard seeds and curry leaves while the North Indian Dahi Vada and Dahi Bhalla are topped with a colorful array of delicious contrasting flavored chutneys, spice powders and garnishes like sev. The yogurt for Dahi Bhalla is thick, creamy, chilled and sweetened with sugar and poured over the soft vadas. At the time of serving, green chutney and sweet chutney are spooned over them followed by a generous sprinkling of roasted cumin powder, red chili powder, chat masala, coriander leaves and finally finished with off with a colorful sprinkle of pink Pomegranate seeds.  You can eat them once you soak them in the yoghurt or “dress” them up with chutneys and masalas, like how I did. Trust me, it just adds that little “umph” to the dahi vadas. This is definitely one of my favorite summer foods. It’s very cooling, light, and of course, delicious.
