Brown Rice Pudding Recipe With Almond Milk

This version is quite different.  We use to make this pudding with fruits, fruits add to pudding its so much more exotic and alluring and it was a welcome change from my regular rice pudding recipe. In your South we got this brown rice, brown basmati rice . In case brown rice is notable for its toasty fragrance that combined with the aromatic scent of the cinnamon stick, white rice rosted and fresh fruits  made my kitchen smell deliciously comforting. The coconut milk makes this dish rich and coconutty in a subtle way and complements the nuttiness of the brown rice. This is quite the wholesome recipe considering it is made with whole grain rice and only 6 tablespoons of sugar. It is the perfect ending to an Indian style meal served with in morning breakfast recipe... So lets see the process to make this pudding recipe.....

Ingredients :-

  • Brown Rice 1 cup
  • Almonds 20
  • Milk 2 cups
  • Ghee 5 tbsp
  • Mango Pulp 5 tbsp
  • Sugar  6 tbsp
  • Pine apple pieces 1/2 cup
  • Coconut milk 1 cup
  • Cinnamon powder 1 tsp

Preparation :-

  1. First take bowl add rice, almonds and soak it for whole night, next day morning clean it then move it to a jar and grind it fine paste. When it came smooth paste then move it to a bowl, next start process to make pudding...
  2. Now take the rice paste add milk and mix it well. Then take a pan add 1 glass of water and boil it for. When water is boiled then put it in low flame.
  3. And then move the rice mixture in to water and mix it well, and boil it for in medium flame.. Boil it for 10 minutes..
  4. After 10 minutes mix the rice and add sugar, cinnamon powder and mix it well.. Then add coconut milk again mix it well.
  5. When the rice is totally boiled then add mango pulp, pine apple pieces and mix it well. And put the lid and cook it in low flame for 5 minutes...
  6. Now take a wok add ghee to heat, when ghee is heated then add almond pieces to it and fry it lite gold color.. Then add to pudding and mix it well, again cook it 1 minute...
  7. After 1 minute mix the mixture and then move it to a serving bowl and serve it cool or hot its so good.....
