    Andhra style lemon rice, Its traditional recipe... Pulihora or Lemon rice is a very common rice dish in south India. Also is a typical naivedyam/ prasadam in temples or at home. To make Pulihora, pre cooked rice is flavored by something sour like lime juice, raw mango or tamarind paste etc. and then it's seasoned with a typical seasoning of lentils and spices. Pulihora is usually served as it is. But I have tasted it along with potato curry and I liked it.Also it can be paired up with curd rice to make it a festive meal. Pulihora is also good for packing in lunch box. It’s a eat in the bowl dish for me as no sides are necessary. My favorite kind of pulihora is the Tamarind one. I always keep the cooked tamarind paste handy so I could quickly make tamarind rice.When I run out of the paste my next resort would be lemon rice. To make lemon rice you need to obviously use lemons but I make it with lime or lemon which ever is handy. I can’t really tell the difference between both of em. For me they both are sour which is the point of making this dish :-). Also they both turn out tasty. I just pick which ever looks fresh in the grocery store. Saying all that, today I’m making it with lime but you can substitute them with lemons. 
     I have used Sona masoori rice for this recipe which we usually consume. Making pulihora with Basmati rice is out of question. It doesn’t look authentic for me and it looks more like pulao. But again its personal preference. Also seasoning is really important for this dish. Don’t be skimpy with seasoning otherwise it just looks like yellow rice. The finished rice should have a crunch in every bite. You can use more green chilies if you like it spicy. I have used 2 limes in this recipe and the sourness of the dish is perfect for me. But you can adjust the sourness by using more or less juice. This is a traditional rice dish usually prepared on auspicious occasions for pujas or vratams. Its an easy dish and takes less time to make compared to chintapandu pulihora or tamarind rice. You can make this for kids lunch box.   • Boiled Rice 2 cups
  • Lemon's 2 (juice use) 
  • Turmeric powder 1/4 tsp
  • Red chilies 6
  • Green chilies 4
  • Oil 5 tbsp
  • Ground nuts 3 to 4 tdsp
  • Bengal gram 2 tdsp
  • Mustard seeds 1 tdsp
  • Urad dal 1 tdsp 
  • Salt to taste
  • Curry leafs

Method :-

  1. First take a wok add oil to heat, when is heated, then add urad dal, bengal gram, mustard seeds, green chilies, red chilies, curry leafs, turmeric powder and fry it for golden color.
  2. When the mixture is fried then add salt, ground nuts also add then fry it for golden color... 
  3. Now take a bowl add lemon juice, when the mixture is totally fried and then add lemon juice and then switch off the gas...
  4. Next take add boiled rice, and then mix it well for, then add fried mixture into rice and then mix it well for... 
  5. The rice will be catch all the mixtures... then put it for 30 minutes a side, after 30 minutes then serve it...

Andhra Recipe Kanda Dosa (Yam Dosa)

Kanda Dosa Andhra morning breakfast recipe its so tasty and healthy recipe.......
Ingredients :-
  • Kanda 250 gram
  • Moong dal 150 gram
  • Ginger pieces 1 spoon
  • Green chillies 6
  • Turmeric powder 1/4 spoon
  • Hing (Asafoetida) pinch
  • Rice flour (or) Rice 1/4 cup
  • Onions 1
  • Salt to taste
  • Oil
Method :-
  1. First soak moong dal, rice for 1 hour, then drain water.
  2. First chop kanda into pieces.
  3. Take a jar and add kanda pieces, soaked moong dal, rice, ginger, green chillies, coriander, turmeric powder, hing, salt and grind it to a rough paste.
  4. Now take a bowl move the kanda mixture, and also add some little bit of water and mix it well.                                                                                                              
  5. Now take dosa pan heat it and make dosa (add chopped onions for better taste) fry it both sides. Then turn to a plate and serve it to coconut chutney or green chutney......

   Hi friend, today different and variety recipe "Brinjal Prawn Curry" recipe. So spicy and delicious recipe. In Andhra we eat sea food heavily.. Actually I am from Nellore coastal area.. We have plenty sea food.. Thats why we prepare sea food here... This combination is very different and taste... And easy to cook this curry.. Prawn and all most vegetables, but my personal favorite is brinjal, or black eggplant. It's a classic combination, contrasting the vegetable's mild, bitter edge with the sweet, faintly briny seafood. The dish tastes even better with medium prawn; the smaller they get, the more concentrated their flavor. A blend of spices and hot chilies floods the plate with warm heat; coupled with steam rice, roti or chapati, it makes for a hearty, satisfying meal. I have prepared brinjal with prawns recipe even prawns goes well with vegetables as well. One of the good combinations for Brinjal is prawns!. Brinjal is available in so many shapes along with many different kind of colors including lavender, green, dark purple, and so-on, but in this recipe I have used green brinjals. Its prefect to this prawn curry that's y I use green brinjal..... Simple ingredients and process also so easy to make this curry..... Let's see the process to make this..... 

Ingredients :-

  • Prawns 250 grams
  • Brinjal 150 grams
  • Onions 2
  • Cashew nuts 10 
  • Poppy seeds 10 grams
  • Coriander 2 spoons
  • Red chilli powder 2 spoons 
  • Green chillies 3
  • Ginger garlic paste 1 spoon
  • Turmeric powder 1/2 spoon
  • Salt to taste
  • Garam masala powder 1 spoon
  • Coriander leafs
Brinjal Prawn Curry Hot And Spice Recipe  How to Make
Preparation :-
  1. First take cleaned prawns add a pinch of salt and turmeric powder fry them in oil (add one table spoon of oil to fry the prawns).
  2. Now take a jar add  poppy seeds, cashew nuts, fried coriander seeds and grind it into fine powder, then add water again grind it paste.
  3. Take a wok add oil to heat, when oil is heated then add finely chopped onions to  fry it for 5 minutes in medium flame.
  4. Next add salt, chopped green chilies, turmeric powder, ginger garlic paste and  fry it for 2 minutes. 
  5. Then add chopped brinjal pieces again  fry it for 5 more minutes it.
  6. Now add paste (poppy seeds, cashew nuts, coriander seed) and  mix it well for.
  7. Fry till oil oozes out, when oil is oozes out then add fried prawns (refer 1st point), red chili powder and mix them along with half glass of water.
  8. It will be boiled then add fresh coriander leafs and garam masala powder and mix it them well, and boil it for 5 minutes then move it to a serving bowl.

Stuffed Brinjal Fry Andhra Style (Gutti Vankaya Fry)

  Hi friends, today different "Brinjal Stuffed Fry" recipe... So tasty and spicy recipe.. In andhra its very famous curry... We prepare this like stuffed brinjal with masala also... So taste recipes.. Brinjals rule and more so in Andhra. I woke up this morning craving for a brinjal roast with rice and pappu pulusu. With numerous stuffings to chose from I finally decided on a stir fry recipe which calls for toasted, coarsely ground spices stuffing for the brinjals that are roasted on slow fire till you achieve a succulent yet crisp texture. Small, green tender brinjals work best for this recipe. Makes a delectable side with rice and pappu pulusu or sambar. Peanuts, red chili’s, bengal gram, cumin seeds all dry roasted & mixed with some coconut & tamarind & ground together to form a yummy powder, which is later on stuffed inside the brinjal & cooked along with some tempered mustard seeds, some heavenly smelling curry leaves .. I know your mouth must be watering reading this elaborate description. :) It does take a wee bit more time than most of the other dishes I posted earlier. But all the efforts are totally worth it, & I’m sure you won’t disagree once you try it. This is popularly eaten with a south Andhra style. Its so good to eat with rice, and also take with smabar, pappu pulusu, rasam its so tasty recipe... Process also so easy to prepare this recipe in your home... In Andhra we prepare some varieties to prepare in this brinjal... So friends lets see the process to make the curry.. 

Ingredients :-

  • Brinjal 250 grams
  • Onion 1
  • Tomato 1
  • Red chillies 8
  • Garlic cloves 6
  • Dried coconut 1/2 cup
  • Cumin seeds(jeera) 2 spoons
  • Mustard seeds
  • Peanuts 1/2 cup
  • Bengal gram dal 5 spoons
  • Tamarind Lemon size (soak and extract the pulp) or take 2 spoons tamarind paste
  • Turmeric powder 1/4spoon
  • Salt to taste
  • Oil 15 spoons
  • Coriander and curry leaf
For stuff preparation :

          First take a wok add 1 spoon oil, then add red chilies to fry for 5 minutes then move to a bowl. Next add 1/2 spoon oil then add bengal gram seeds, cumin seeds and fry it good smell, and then move to a bowl. Next roast peanuts. Then move it to a plate and cool it for. Then remove the skin for peanut. Next take a jar add all these ingredients, salt,turmeric powder and grind it fine powder. 


Preparation :-

  1. First cut the brinjals with out cutting through the stem totally, make perpendicular slits. Next stuff the brinjals with the mixture, and put a side.                                                                                                
                  
                                                                                                           
  2. Next take a pan add oil heat, when oil is heat then add mustard seeds, curry leafs and fry it. Then add stuffed brinjals and mix it and put the and cook for 3 minutes.                                                              
                                                                                                                            
  3. After 3 minutes then mix it carefully, then add chopped onions, chopped tomato and mix it well.                                                                                                                                                                                          
                                                                                                                                                             
  4. Next add remaining mixture and mix it well, then put the lid for 5 minutes. Then add tamarind water and mix it (1 glass of water to use).                                                                                                            
                                                                                                                                                
  5. And boil for 1 vissel. Then turn off the gas.   6. Next take a pan add oil, and then turn the mixture to the pan, and mix it carefully. Fry for 5 minutes.

Often our lunch comprises of wholesome and filling salad or one pot meals and loads of flavored buttermilk. I made a simple and delectable chicken curry for our mid day meal. A regular Andhra chicken curry recipe with a slight twist. Today I use chicken with bone its very tasty and so hot & spicy.. Its one of our favorite chicken curry recipes that goes well with flavored rice, plain cooked rice and rotis chapati's. Try it and I am sure it will be a regular fare in your kitchen as well.
