Amaranthus Toor Dal Curry Recipe How to Make

This morning, my regular vegetable vendor brought home fresh Chirikura aka amaranth leaves. Isn’t it lovely cooking clean and fresh ingredients and transforming them into simple healthy meals? One green leafy vegetable should be consumed daily in our meal by one way or the other as they contain iron, magnesium and other minerals that are essentially required for our body.  Normally Dal curries are made in combination with green leaves like Spinach, Amaranth leaves, sorrel leaves, fenugreek leaves etc. For sour conscious people, Sorrel spinach will be a good choice to prepare with dal as it contains Vitamin C, rich in Oxalic acid as well as magnesium, iron and other minerals. It also helps in prevention of  cancer, hypertension, diabetes etc. It also helps in controlling hair loss. Sorrel leaf toor dal is a famous recipe in south india which will be delicious and can be eaten with rice or roti. Amma made this dal, so I can’t take any credit for anything other than clicking the pictures!! The way it got polished off at the table, it deserved to make its appearance here!! This is a simple yet very tasty preparation that can be had with rotis or rice.  This is a dal that is guaranteed to have the most slurps you have ever heard while eating a dal dish!! My amma prepare with leafy vegges so many varieties, like amaranthus dal, amaranth tangy curry, fry, etc..., Not only with amaranthus, amma prepare with fenugreek leaf, spinach, sorrel, like all type of green leafy vegges to prepare..
