Andhra Style Spicy Chicken Fry Recipe How to Prepare

         Chicken fry is a delicious dish with great aroma and taste. It has very little,thick gravy or to say it is a rather dry roasted form. I have added lots of chili powder to give a nice spice kick to the chicken fry. You can reduce the amount of chilly powder and add more of onions if you like the spicy flavor. Spicy Andhra Chicken is another roast recipe its my family favorite dish. It is a dry version and is great accompaniment with rice, chapathi or fried rice. The chicken in this recipe is usually deep fried or shallow fried, (some times whole stuffed chicken ) and then coated with the masala. Here I have shallow fried the chicken. It  tasted delicious with fried rice.  In my home we eat this recipe with plain rice for side dish recipe... Give this recipe a try... This goes well with rice, parattas and chapati.... Lets see the process to make this.......

Ingredients :-

  • Chicken 1/2 kg
  • Onions 3 
  • Tomatoes 4
  • Green chilies 4
  • Red chili powder 2 tbsp
  • Turmeric powder 1/4 tsp
  • Salt to taste
  • Oil 10 tbsp
  • Garam masala powder 1 tbsp
  • Coriander powder 1 tsp
  • Coconut powder 3 tbsp
  • Coriander leafs
  • Curry leafs 
Preparation :-

  1. First take a cooking bowl add 3 tbsp oil to heat, when oil is heated then add chopped onions, chopped tomatoes, chopped green chilies, chicken pieces, salt, turmeric powder, red chili powder and then mix it well.... Put the lid and cook it for dry the chicken....
  2. When chicken is totally cooked then switch off the gas put it a side, now take a wok add oil to heat, when oil is heated then add boiled chicken fry it for...
  3. Fry it in medium flame for 10 to 15 minutes... Chicken will be totally fried then add garam masala powder, coriander powder, coconut powder and then mix it well for....
  4. Again fry it for 10 more minutes in medium flame... Chicken absorb all the masala powder, then add chopped coriander leafs and curry leafs then mix it well..... Then move it to a serving bowl and then serve it hot.....

Bitter Curry (Kakarkaya Pachi Pulusu) recipe How to Prepare

       Hi friends.... today one traditional desi recipe "Bitter Curry (pulusu)"... Its very traditional recipe in Andhra... Mainly prepared this curry in villages... My grand mom prepare this recipe... Actually I love bitter vegetable, I will prepare it like fry, red chili masala stuffed fry, coconut masala fry, etc... But my grand mom prepare this taste recipe for me, when he will came to my home.. Or went to my grand mom home she most be prepare that recipe.. Its really so sweet and sour... So I will show today my grand mother's recipe....  In this pulusu (curry) we used tamarind raw with out any cooking involved. Tamarind is soaked in water and the extracted water is mixed with jaggery to help cut the bitterness of the fried bitter gourd. Pulusu (curry) is finally tempered and is served with steamed rice... 

Ingredients :-

  • Bitter (Kakarkaya) 100 grams
  • Tamarind puree 50 grams
  • Salt totaste
  • Green chilies 5
  • Red chili powder 1/2 tbsp
  • Oil 5 tbsp
  • Mustard seeds 1/2 tsp
  • Urad dal 1 tsp
  • Cumin seeds 1 tsp
  • Jaggery 50 grams
  • Turmeric powder 1/4 tsp

Preparation :-

  1. First take a bowl add bitter pieces, salt and then mix it with help of your hands... Mix it for 5 minutes, water will came out then press it tight then move to a side.
  2. Now take wok add oil to heat, when oil is heated add urad dal, cumin seeds, mustard seeds to fry.
  3. Then add red chili pieces, bitter pieces, salt, turmeric powder, red chili powder and fry it for....... When bitter is fried, then add chopped onions mix it then switch off the gas...
  4. Now take bowl add soaked tamarind puree, salt, jaggery crush and mix it well... When jaggery is melted then add fried onion mixture in it. Then mix it well for...
  5. Then move it to a serving bowl add chopped coriander leafs, curry leafs and then serve it with hot steam rice......
Now tasty yummy sour Bitter Curry (Pachi pulusu) is ready to eat... Its tasty and tangy flavour.. So simple to prepare this curry... So friends try this my grand mom's recipe.... :)

Haa little bit changes I tried in traditional recipes I prepared.... One of the things I like to make is a large pot of tomato sauce or red chili sauce for my husband.  A good vegges  pasta and  sauce is a kitchen staple.  It can be used to whip up a weekday meal and simply served with pasta or used as a base for a whole variety of dishes from. One of the things I like to do with the sauce is to fry up some capsicum pieces in olive oil and carrot pieces, add the sauce, cook the sauce for a few minutes and allow the vegges to absorb the flavour of the sauce before adding some boiled pasta and sweet corn...   1. First take a bowl add sweet corn, pasta, water, salt to taste, olive oil 1 tsp and then boil it for... 15 minutes, when pasta is boiled then strain water to a bowl....
  2. Then take a wok add olive oil to heat, when oil is heated then add finely chopped capsicum pieces, little bit salt then mix it well....
  3. Fry it for good smell, it will be live raw smell then add carrot pieces and then fry it for 2 minutes, now add chopped spring onions and then fry for 2 more minutes......

  4. After 2 minutes, add red chili sauce, green chili sauce, soya sauce, tomato sauce and mix it well.... After that add some 1/4 glass of water (boiled pasta water) mix it well.
  5. Now add boiled pasta and sweet corn mix it well for...... Then add noodles masala powder again mix it for...... Cook it for 2 to 4 minutes then switch off the gas..... then turn to the serving bowl........

How to Cook Chicken Garlic Curry Recipes Indian Style

     Hi all, today recipe "Garlic Red Chili Chicken", as the name suggests, is cooked in lots of Garlic and has a distinctive flavour. It can be found in different forms across India.  I have provided my style of this popular dish in this recipe. Well having got up at 6 this morning to take missus to work i couldn't get back to sleep so i thought i'd have another look at the specials board to try a new dish and decided on garlic chili chicken The curry can be made hot or medium depending on the amount of red chilies. I did change it slightly as I am not too keen on seriously hot currys, so i reduced the chilis to 5 (de-seeded) and the red chili paste to 1 tbsp and for me it was absolutely spot on... I know most people probably want to increase the heat but personally I feel too much heat spoils the overall flavour. I also added a good pinch of red colouring which gave it much nicer visual appeal. And also I use in this recipe black pepper also for more taste, and also I use some capsicum pieces also for taste and combination to chicken..... So lets see the process to make the Hot & Spicy Chicken Garlic Curry.........

Ingredients :-

  • Boneless Chicken 250 grams
  • Capsicum 1
  • Red chili paste 1 tbsp
  • Pepper powder 1 tsp
  • Lemon juice 2 tbsp
  • Salt to taste
  • Ginger Garlic paste 1/2 tsp
  • Ginger pieces 1 tsp
  • Garlic pieces 2 tbsp
  • Red chilies 4
  • Soya sauce 1 tsp
  • Tomato sauce 1 tbsp
  • Oil for deep fry
  • Butter 3 cubes
  • Corn flour powder 5 tbsp

Preparation :-

  1. First take a bowl add chicken cubes, salt, lemon juice, pepper powder, ginger garlic paste and mix it well, and soak it for 10 to 15 minutes..
  2. After 15 minutes chicken will be soft and juice... Now take a pan add oil for deep fry, when oil is heated and then take chicken pieces dip into corn flour powder and then move it to oil and then fry it for golden brown color..
  3. It came golden color then move it to a paper towel. Start next process....
  4. Now take a wok add butter cubes to heat, when butter is melted then add ginger pieces, garlic pieces to fry.
  5. When garlic is fried then add chopped capsicum pieces and then fry it for good smell.... Then add red chili pieces also add and then fry it for......
  6. Red chilies also fried, now add soya sauce, water 1 cup and then mix it well add little bit of salt, and boil it for 5 minutes in medium flame.
  7. Water is boiled, add red chili paste, tomato paste and boil it for 5 more minutes in low flame.... 
  8. After 5 minutes, then add fried chicken pieces and then mix it well for.. And cook it for 5 minutes, now take a bowl add corn flour powder 1 tbsp, add some water mix it well then add to chicken and mix it...
  9. Cook it for 5 more minutes, when the chicken will be dried then move it to a bowl and then serve it.........

    Spicy  Chicken Korma Curry How to make
Preparation :-

  1. First take a bowl add chicken pieces, salt, red chili powder, turmeric powder, ginger garlic paste 1/2 tbsp, curd and then mix it well, marinate for 30 minutes.
  2. Next take a pan add oil to heat, when oil is heated then add shah jerra, cinnamon stick, cloves fry it. Then add chopped onions, green chili pieces fry it for lite red color.
  3. When onions are fried then add ginger garlic paste, turmeric powder mix it well, then add marinated chicken pieces mix it well for.
  4. Then close it with lid and boil it for 10 to 15 minutes in low flame. Then add chopped tomato pieces mix it again close the lid and cook it for.
  5. Now add poppy seeds paste, water 1 glass and then mix it, then add salt to taste... Boil it for 10 minutes it came thick consistency, add garam masala powder mix it well...
  6. Then add coriander leafs also mix it then move it to a bowl and then serve it hot....

  1. First take bone chicken breast cut it into small straight stripes (like finger shape) and then put a side.
  2. Next take a bowl add 1/2 tsp pepper powder, salt, ginger garlic paste, soya sauce 1/2 tbsp then mix it well. Then add maida flour, corn flour, egg then mix it well for, then add little bit aji no moto also again mix it marinate for 30 minutes.
  3. Now take a wok add oil for deep fry the marinated chicken, when oil is heated then take each chicken stripes add to oil for fry (fry it in medium flame only).. When it came golden color then move it to a paper towel and then put it a side..
  4. Next take a wok add oil to heat, when oil is heated then add finely chopped ginger garlic pieces, chopped spring onions, soya sauce, red chili paste, water 1 cup and then mix it well.
  5. Then add little bit water, aji no moto, pepper powder then boil it for 5 minutes. Then add fried chicken pieces, garam masala powder, coriander powder, coriander leafs and then mix it well.
  6. Boil it for dry the chicken, when chicken totally dried then move it to a serving paste then add some coriander leafs and then serve it hot.....
