       Hi friends, today recipe Chinta Chiguru (Tamarind leaves) with Small Dry Fish gravy... Actually this recipe is so old.. My husband grand mother prepare this desi recipe... My husband told the recipe so I tried this recipe in your home.. Wow friends the taste is simply wow no words to share you must try this old recipe...... Simple ingredients and simple to prepare this.. Not only this gravy my grand mother will be prepared like chinta chiguru pappu (tamarind leaves dal).. The thought of Chinta Chiguru pappu, as it is commonly called at home, makes my mouth water. Tender tamarind leaves are heavenly when used in either Dal, Pacchadi(Chutney) or Podi(Powder). These leaves are available during early spring to early summer (In Andhra, India). That is the time to get them in large quantities and sun dry them for later use. Chinta chiguru, tender tamarind leaves is available in South India during early spring. As the name suggests, tender leaves from tamarind tree are sold in Andhra Pradesh and other South Indian states. The leaves have a subtle start flavor without being overly sour. They increase the nutrient value of the dish and add a nice tangy taste to it. The leaves are a good source of vitamin C. Lets see the process to make this gravy step by step with pics.......

Ingredients :-

  • Tamarind leaves (Chinta chiguru) 1 cup
  • Small Dry Fishes 100 grams
  • Onions 3
  • Tomatoes 3
  • Turmeric powder 1/4 tsp
  • Red chili powder 4 tbsp
  • Salt to taste
  • Oil 10 tbsp
  • Mustard seeds 1 tsp
  • Curry leaves 
Preparation :-

  1. First take a cooking vessel, then add oil to heat when oil is heated then add mustard seeds to fry.. Then add chopped onions, salt, curry leaves, turmeric powder and then mix it..
  2. Mix it then close it with lid fry it for lite brown color...
  3. When onions are fried, then add cleaned small dry fish, tomato pieces mix it well for...
  4. Then add red chili powder, again mix it well for... Then close with lid boil it for 5 more minutes in low flame...
  5. After 5 minutes, open the lid mix it care fully, then add cleaned tamarind leaves (Chinta chiguru) mix it.... 
  6. Again close with lid boil it for 3 minutes, then open the lid mix it... Again close it boil it for oil will be oozes out...... 
  7. when oil oozes out, then mix it once again fry it for 1 more minute then switch off the gas and close it with lid for 10 to 15 minutes..... After 15 minutes move it to a serving bowl and serve it..........

  • Tomatoes 3 big size
  • Onions 2 medium size
  • Green chilies 10

  • Tamarind little bit
  • Oil 6 tbsp
  • Garlic cloves 3
  • Urad dal 1 tsp
  • Mustard seeds 1 tsp
  • Cumin seeds 1 tsp

Process :-

  1. First take a cooker add cleaned lentils, ridge gourd pieces, tomato pieces, onion pieces, green chilies, turmeric powder, red chili powder, tamarind, water 1 glass then close with lid boil it... 4 vissel came then switch off the gas... And cool it for.  
  2. When the cooker is cool then open the lid, add salt then mash it like this.. 
  3. Now take a wok add oil to heat, when oil is heat urad dal, mustard seeds, cumin seeds, garlic crush to fry... Then add curry leaves, red chili pieces to fry, now add mashed dal to pan mix it well.. Boil it for 1 minute then move it to a serving bowl......

This recipe also so good and tasty and simple item.. In this fry combination is tomato pappu (tomato dal) recipe great combination.. With the summer getting more and more hot this simple stir fry not only reduces the time spent in the kitchen simple and easy process half boil dal then make this fry..... So lets see the process to make this fry step by step.......

Ingredients :-

  • Carrot 250 grams
  • Pesara pappu (Moong Dal) 1/2 cup
  • Onions 2
  • Turmeric powder 1/4 tsp
  • Red chili powder 2 tbsp
  • Salt to taste
  • Coriander powder 1 tsp
  • Garlic cloves 3
  • Oil 6 tbsp
  • Urad dal 1 tsp
  • Mustard seeds 1 tbsp
  • Cumin seeds 1 tsp

Process Making :-

  1. First take a wok add oil to heat, when oil is heated then add urad dal, mustard seeds, cumin seeds to fry... Then add chopped onions, chopped carrot, salt, turmeric powder and then mix it well....
  2. Mix it, then close with lid and cook it for 5 minutes in low flame... After 5 minutes open the lid, again mix it well..
  3. Again close with lid cook it for 3 minutes in low flame.. Now take a bowl add (moong dal) pesarapappu boil it for 50% only.. When dal is boiled then strain water add only dal in to carrot again mix it..
  4. When the dal is boiled with carrot, then add coriander powder, red chili powder mix it well for.. Fry it for 1 minutes then switch off the gas move it to a serving bowl.......

Now the fry recipe is ready to serve..... Its good to eat steam rice and also serve with tomato pappu (tomato dal), pappu pulusu (dal curry), rasam is great combination.....          Hi friends, today one spicy and delicious recipe "Cauliflower Coconut Milk Masala Curry"... Its very simple and tasty curry.. I love cauliflower recipes, they are so tasty and can be made into pretty much anything. This is my latest favorite and love to have it with naan, paratha, roti, chapati, veg fried rice and hot steam rice.

  • Cauliflower (Gobi) 1
  • Onions 2
  • Tomatoes 3
  • Coconut milk 1 cup
  • Turmeric powder 1/4 tsp
  • Red chili powder 2 tbsp
  • Garam masala powder 1 tsp
  • Coriander powder 1 tsp
  • Oil 8 tsp
  • Cardamom 3
  • Cinnamon sticks (medium pieces) 3
  • Shajeera 1 tsp
  • Cloves 4
  • Bay leaf
  • Ginger garlic paste 1,1/2 tbsp
  • Salt to taste
  • Curry leaves
  • Coriander leaves

Preparation :-

  1. First take a cooker add chopped cauliflower pieces, salt, turmeric powder little bit, water and then close with lid boil it for 60% (one vissel).. Then move it a side cool it for.. Then open the lid strain water keep it a side.... Noe take a wok add oil for deep fry, when oil is heated then add boiled cauliflower pieces to fry.......

  2. When the cauliflower is fried like this then move it to a plate... Now take another pan add oil to heat, then add cloves, cardamom, cinnamon sticks, shajeera, bay leaf to fry... Then add chopped onions to fry....... 
  3. Onions are fried, then add ginger garlic paste, tomato pieces mix it well for.. Then add salt, turmeric powder mix it well for.. Then add red chili powder  again mix it well then close with lid...... Cook it for medium flame 5 minutes..
  4. After 5 minutes open the lid mix it well, then add fried cauliflower mix it well for.... Then add coconut milk mix it well again close it with lid... Boil it for again 5 more minutes.. When the gravy is boiled then add coriander powder, garam masala powder mix it well for.. Boil it for 1 more minute then move it to a serving bowl.......

  4. when rice is boiled 90% then put it in dum for 5 minutes.... When rice is totally boiled then switch off the gas... and leave for 5 minutes and then serve this with raita.........

Prawn Curry Recipe with Coconut Paste Andhra Style

         Hi friends, today recipe Prawn curry.. My Sunday recipe, with prawn biyani... First sorry to late post.. I’ve seen many people who don’t like the dishes that are prepared with Prawns or Shrimp.  But believe me, whether it is a prawn curry or prawn biryani they have the awesome taste. The one I’m going to show here is one of the unique and simplest ways to prepare the prawn curry with gravy. I will show in my blog prawn curry's this is my second gravy recipe... Only a foodie understands why one writes about food. On the similar lines, the way a foodie looks at food is totally different from the way a non-foodie looks at it. For some the food may be just a way to survive and satisfy those hunger pangs whereas 'a foodie cooks with passion, then admires his perfect creation, then savors it along with the loved ones and then shares his wonderful experience with others.' When this curry boils, the combined aroma of the prawns and all the spices is remarkable. Beware, you might make your (non-vegetarian) neighbors jealous.  
Ingredients :-

  • Prawns 250 grams
  • Onions 3
  • Tomatoes big size 2
  • Fresh coconut paste 1/2 cup
  • Ginger garlic paste 2 tbsp
  • Red chili powder 3, 1/2 tbsp
  • Turmeric powder 1/2 tsp
  • Salt to taste
  • Oil 8 tbsp
  • Cardamom 3
  • Coriander powder 1 tsp
  • Coriander leaves
  • Curry leaves
Garam Masala Powder Ingredients :-

  • Sompu (Fennel) 1 tbsp
  • Coriander seeds 2 tbsp
  • Cumin seeds 1/2 tsp
  • Black Pepper 1 tbsp
  • Cardamom 3 to 4
  • Cloves 5 to 6
  • Cinnamon stick pieces 4 to 5 (medium)
Preparation for Making Masala Powder :-

  1. First take a wok heat it, when wok is heated then add coriander seeds, sompu, cumin seeds, black pepper, cardamom, cloves, cinnamon stick dry roast it.. When the masala is fried it came good smell.. Then switch off gas and put it a side for cool.. When whole garam masala is cooled then move it to a jar and grind it fine powder, then move it to a tight container and store it..... This masala for use in this gravy......
Gravy Preparation :-

  1. First take a wok add oil 2 tbsp to heat, when oil is heated then add cleaned prawns, salt, turmeric powder and then mix it well.. And boil it for water will be vapor.....

  2. When prawn are boiled then add red chili powder 1 tbsp mix it well for...... Again boil it for 3 more minutes...... Then move it to a side..
  3. In same wok add some more oil to heat, when oil is heated then add cardamom to fry.. Now add chopped onions to fry......
  4. When onions are fried then add chopped tomatoes, salt, turmeric powder mix it well and boil it tomatoes are be soft.... Tomatoes are softed then add ginger garlic paste, fresh coconut paste and mix it well.. Fry it for oil oozes out......
  5. Oil oozes out then add boiled prawns, red chili powder and then mix it well for....... Then close with lid cook it for 5 minutes in low flame... After 5minutes, open the lid and mix it like this.......
  6. And then add water mix it... Again close it will lid and boil it this.... When bubbles came like this gravy also thick..
  7. When gravy also thick then mix it once then add coriander powder, garam masala powder, curry leaves and mix.. And then add chopped coriander leaves also add and then mix it again put it for 1 minute and then move it to a serving bowl......

Now tasty and spicy delicious recipe is ready to serve...... You can serve this with steam rice or biryani.. Today I will share with prawn biryani rice...
