Tamarind Leaves with Dry Fish Gravy Andhra Style How to Make

       Hi friends, today recipe Chinta Chiguru (Tamarind leaves) with Small Dry Fish gravy... Actually this recipe is so old.. My husband grand mother prepare this desi recipe... My husband told the recipe so I tried this recipe in your home.. Wow friends the taste is simply wow no words to share you must try this old recipe...... Simple ingredients and simple to prepare this.. Not only this gravy my grand mother will be prepared like chinta chiguru pappu (tamarind leaves dal).. The thought of Chinta Chiguru pappu, as it is commonly called at home, makes my mouth water. Tender tamarind leaves are heavenly when used in either Dal, Pacchadi(Chutney) or Podi(Powder). These leaves are available during early spring to early summer (In Andhra, India). That is the time to get them in large quantities and sun dry them for later use. Chinta chiguru, tender tamarind leaves is available in South India during early spring. As the name suggests, tender leaves from tamarind tree are sold in Andhra Pradesh and other South Indian states. The leaves have a subtle start flavor without being overly sour. They increase the nutrient value of the dish and add a nice tangy taste to it. The leaves are a good source of vitamin C. Lets see the process to make this gravy step by step with pics.......

Ingredients :-

  • Tamarind leaves (Chinta chiguru) 1 cup
  • Small Dry Fishes 100 grams
  • Onions 3
  • Tomatoes 3
  • Turmeric powder 1/4 tsp
  • Red chili powder 4 tbsp
  • Salt to taste
  • Oil 10 tbsp
  • Mustard seeds 1 tsp
  • Curry leaves 
Preparation :-

  1. First take a cooking vessel, then add oil to heat when oil is heated then add mustard seeds to fry.. Then add chopped onions, salt, curry leaves, turmeric powder and then mix it..
  2. Mix it then close it with lid fry it for lite brown color...
  3. When onions are fried, then add cleaned small dry fish, tomato pieces mix it well for...
  4. Then add red chili powder, again mix it well for... Then close with lid boil it for 5 more minutes in low flame...
  5. After 5 minutes, open the lid mix it care fully, then add cleaned tamarind leaves (Chinta chiguru) mix it.... 
  6. Again close with lid boil it for 3 minutes, then open the lid mix it... Again close it boil it for oil will be oozes out...... 
  7. when oil oozes out, then mix it once again fry it for 1 more minute then switch off the gas and close it with lid for 10 to 15 minutes..... After 15 minutes move it to a serving bowl and serve it..........
