Kakarakaya Pulusu (Bitter Gourd) Recipe How to Prepare

            Hi, today one desi recipe Kakarakaya Pulusu (Bitter Gourd Gravy) recipe.. This recipe is my grand mother cousin recipe.. My grand mother (my mother mother) prepare so many gravy's, and pachadi recipes.. My grand mother prepare one recipe pachimirchi pachadi mmmmmmhhhhhhhh!!!!!!!!! no words to share :).. But am sure I will share that recipe also for my loving friends....... In this Kakarakaya pulusu we use kakarakaya fruit (bitter gourd fruit) only perfect.. And also we use some jaggery also little sweet.. Kakarakaya (Bitter gourd) is the best vegetable that is having lots of nutritious and health benefits. Since the bitter gourd gives bitter on taste buds so many people exclude this vegetable. But once you know the technique of how to cook the bitter gourd by avoiding bitter taste then sure you wont leave this beautiful vegetable. Here is the recipe of bitter gourd curry / Kakara kaya pulusu. I have prepared this dish by adding the jaggery so the dish gives a sweet taste. While preparing this bitter gourd sweet curry choose the ripe bitter gourds because these will be little bitter in taste. So those who don’t like to eat bitter curry can also taste this little spicy kakarakaya pulusu. Don’t peel off the skin of the bitter gourd while preparing the curry because the crunchy and nutrients contains in this peel also. This curry can be stored for 3-4 days because we have added tamarind juice. So do you want to know how to cook this bitter gourd sweet curry? Why delay here is the recipe for you....:)

Ingredients :-

  • Kakarakaya (Bitter gourd) 250 grams
  • Jaggery 1/4 cup
  • Onions 3
  • Tomatoes 3
  • Tamarind big lemon size (soaked)
  • Turmeric powder 1/4 tsp
  • Red chili powder 3 tbsp
  • Salt to taste
  • Oil 8 tsp
  • Mustard seeds 1 tsp
  • Fenugreek seeds 1/4 tsp
  • Curry leaves
Making Process :-

  1. First take Kakarakaya pandlu (bitter gourd fruit) wash it and cut it small pieces like this.... 
  2. Now take a wok add oil to heat, when oil is heated then add mustard seeds, fenugreek seeds to fry.. And then add chopped onions, salt, turmeric powder and now mix it well fry it for onions are be soft..
  3. When onions are soft, then add chopped tomatoes, red chili powder then mix it well... Then close it with lid and cook it for 3 more minutes in low flame......
  4. After 4 minutes open the lid, when tomatoes are soft mix it well... Then add chopped Kakarakaya pieces again mix it.. Then close it with lid and cook it for 5 minutes in low flame....
  5. After 5 minutes open the lid mix it for, then add soaked tamarind mash it then add only tamarind water then mix it well.. Again close with lid and boil it for on boil... One boil will came then add jaggary powder then mix it well and boil it again for 10 minutes more.... in low flame......
  6. Once check it, again close and boil it for oil will oozes out... When oil is oozes then add curry leaves mix it then close with lid switch off the gas and leave it for 20 minutes.. After 20 minutes then move it to a serving bowl.........  

Now the dish is ready to eat......... Its my favorite dish friends.. so friends try this recipe in your home and enjoy the new taste... Its good to serve with hot steam rice.. :) Your's Neha Satish....
