Nuvvlu Vankaya Gutti Kura How to Prepare

      Gutti Vankaya Kura or Stuffed Eggplant/Brinjal curry is Andhra traditional special curry. This dish can be made with either the small purple brinjals or the small round green eggplants. But you need to make sure that the brinjals are absolutely fresh, shiny and tender (the seeds should’nt be black) without a dry withered look. This dish tastes good only if the brinjals are fresh, young and tender. Well stuffed brinjal curry can be made with a variety of stuffings. If the brinjals are tender you don’t need to use a pressure cooker. The brinjals will cook well on steam in a cooking vessel, if tender. This recipe so old my Amamma (My mom mother) will make this curry.. Today I will show that old recipe same as it is... My amma prepare this recipe regularly, brinjal is your favorite vegg.. Well anyway coming back to the gutti vankaya curry, I’ve never actually stuffed the eggplants before; I cook the pieces in the gravy and call it a day. The fact of the matter is, when you are eating you eat the piece with the gravy anyway, so why spend time on the stuffing part.   
   An exotic Andhra-style rich celebration dish with smooth, warm and rich flavors. No onions or tomatoes go into its making, the main player being poppy seeds which lend the dish its body and a subtle sweet flavor. As you bite into the eggplant, you can savor layers of roasted sweet, tangy and savory flavors. She would warn him before, but at last, they used to be there in the bag. When talking about Andhra vegetarian Cuisine, Gutti Vankaya or Stuffed eggplant cuury is the one that will surely jog your memory. It is usually made with tender, short and round egg plants (brinjal) be it a white or green or purple (your choice of color) the taste is pure fiery heaven. There are numerous ways of making this curry, but this is my amma recipe and our family favorite A part from its wonderful taste, this recipe provides a very healthy meal, as  it is loaded with protein packed calcium rich sesame seeds. A good reason to make this dish more often in every ones house.  So friends lets see the process to make the taste recipe...

Ingredients :-
  • Brinjal small size 1/4 kg
  • Poppy seeds powder (or) paste 6 tbsp
  • Jaggery little bit (2 tbsp)
  • Coriander powder 1 tbsp
  • Cumin seeds powder 1 tbsp
  • Mustard seeds 1 tsp
  • Turmeric powder 1/4 tsp
  • Red chili powder 2 tbsp
  • Tamarind puree 1/2 cup
  • Curry leafs
  • Coriander leafs
  • Salt to taste

Preparation :-
  1. First take a bowl add water, salt 1/2 spoon  in it, then take fresh brinjals cut it into gutti vankaya shape and then put into water.
  2. Now take a pan add oil to heat, when oil is heated then add mustard seeds to fry, then add curry leafs also.
  3. Then add cut brinjals to fry, then add some slat, turmeric powder and then fry it for 10 minutes in medium flame.
  4. After 10 minutes just mix it. And check the brinjal is soft then add coriander powder, cumin seeds, red chili powder, tamarind puree and then mix it. Add 1/2 glass water and then mix it well and put the lid and cook it for.
  5. When the curry is boiled then add poppy seeds powder (or) paste, jaggery mix it and again cook it for thick in medium flame...
  6. And the gravy is thick then add fresh coriander leafs... Once's check salt to dish out..
