Raw Plantains are a low glycemic source of carbohydrate and full of nutrition. Aratikaya as its known in Andhra is a regular every day vegetable in South Indian vegetarian cuisine. The key is to use fresh and firm green plantains before they ripen to a yellow shade. Today’s vegetarian stir fry recipe makes for a perfect side dish with rice, sambar, papad and a bowl of yogurt. This simple plantain fry calls for a few aromatic spices like red chilis, gram masala powders, which brings immense flavor to the well roasted plantains. Tempering of curry leaves and fresh coriander leaves as a final garnish are essential so do not compromise with these ingredients.
Ingredients :-
- Raw banana (Aratikaya) 2
- Bengal gram flour 2 tbsp
- Dry red chilies 5 (boil for 10 mins)
- Garam masala powder 1spoon
- Lemon juice 2 tbsp
- Garlic Cloves
- Salt to taste
- Oil 10 tbsp
- Coriander powder
- Curry leafs
Method :-
- First peel the banana and then wash it. And then cut it into round pieces.(soak in to salt water.)
- Next take a jar add boiled red chilies, cloves, salt, garam masala powder grind it fine paste, and then add lemon juice and once grind it.
- Next take a bowl add bengal gram flour, salt, grind chili paste, Coriander powder and mix it.
- And the add chopped banana pieces and mix it well and soak it for 15 minutes.
- Next take a wok add oil to heat, when oil is heat then add banana pieces to the oil.
- Take each piece and fry it for both side, fry it in medium flame and fry it.
- And then it came's golden color and then add curry leaves and fry it for 2 minutes. And then move it to a serving bowl and serve it with side to rice.. Like papu, papupulusu, rasam great combination to eat it.........
