Gongura Pickle Andhra Style Chutney How to Prepare

          Hi friends, today I am sharing pickle or chutney recipe Gongura (pitwa / red sorrel leaves) Pickle (pachadi).. In Andhra its name is "Andhra Matha" its very old and traditional pickle.. My grand mother will learn to me how its prepare... My grand mother prepare very different style.. My amma prepare another style :) I will share next time... But today I will share my sister- in- law prepare this pickle here style so friends try this...... So lets see the process to make this simple single pan..    
How to Make Gongura Pickle Andhra Style Chutney

Ingredients :-

  • Gongura 2 big bunches (red sorrel leaves)
  • Red chilies 10 to 15
  • Coriander seeds 2 tbsp
  • Cumin seeds 2 tsp
  • Mustard seeds 1 tbsp
  • Fenugreek seeds 1/2 tsp
  • Rock salt to taste
  • Oil 10 tbsp
  • Bengal gram 2 tbsp
  • Urad dal 1 tbsp
  • Mustard seeds 1 tbsp
  • Hing powder 2 to 3 pinches
  • Onion 1 big

Preparation :-

  1. First take a wok add 1 tsp oil then add coriander seeds, cumin seeds, red chilies, mustard seeds, fenugreek seeds and now fry it for roast.... When all ingredients are roasted then move it to a side and cool it for..... After ingredients are cool then move it to jar, now add rock salt and then grind it rough powder like this........

  2. Now take same wok add 10 tbsp oil to heat, when oil is heated then add urad dal, bengal gram, mustard seeds, hing powder, 2 red chili pieces and fry it... And now add gongura leaves mix it well slowly....

  3. Boil it for oil will oozes out like it (gongura is totally fried or cooked like this...)... Gomgura is totally mashed then add grind chili powder and mix it well for..... like this......

  4. And fried it for 5 minutes in low flame.. Oil will oozes out, then add chopped onions mix it well for....... Then switch off the gas leave it for cool...... When it will be cool then store it in a tight container it will be store 10 to 15 days...... 
Now the pickle is ready.... After 2 days it will be store in refrigerator (why mean we using fresh onions na that's y u must store in freeze it will be store 15 days or more.....) If you use garlic cloves you will store in room temperature it will be store 10 days.......  (But taste is onion only guys..)
